Chocolate Cranberry Christmas Bars

These decadent bars look lovely served up as a snack on Christmas morning. They're simple and have a great combination of Christmas flavours.

Makes: 10 bars

  • 160g butter
  • 2/3 cup (75g) brown sugar
  • 2 large eggs
  • 1 1/2 cups traditional rolled oats
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1 1/4 cups sweetened, dried cranberries
  • 1 cup dark chocolate chunks - set one 1/3 cup aside for decorated cooked bars

  1. Preheat oven to 190 Degrees C.
  2. In a large bowl beat butter and sugar together until light and fluffy. Add eggs and mix well.
  3. In a medium bowl combine oats, flour, baking soda and salt then add to butter mixture one cup at a time. Stir in dried cranberries and 2/3 cup dark chocolate. Pour mixture into a square 20cm baking dish and smooth down flat. Bake for 20-25 minutes or until golden brown. Cool in dish and then cut into 10 even bars. Put onto wire cake racks.
  4. Place remaining 1/3 cup of dark chocolate in a small zip lock bag with a small section open at the top. Heat in 10 second lots until melted. Snip off one corner to allow a small hole. Decorate bars one at a time in a zigzag pattern. Wait until chocolate sets before serving.
