This spice cake has caraway seeds, ginger, raisins, currants and lemon peel. It is a very flavourful and aromatic cake and tastes a bit like aniseed.

Makes: 1 cake

  • 3/4 cup (190g) butter
  • 3/4 cup (170g) sugar
  • 2 1/2 cups (310g) flour
  • 1 teaspoon bicarb soda
  • 1/4 cup raisins
  • 1/2 cup currants
  • 60g caraway seeds
  • 30g ground ginger
  • 1/2 teaspoon lemon peel, grated
  • milk, to form batter

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Preheat oven to 180 degrees C.
  2. Cream butter and sugar. Sift in flour and soda. Add raisins, currants, caraway, ginger and lemon peel. Mix in enough milk to make a batter.
  3. Pour into greased cake tin and bake until a knife inserted into the centre comes out clean.
