Seeing quinces cannot be eaten raw, quince jelly is a lovely way to use the fruit. The natural pectin in the fruit causes it to set with out anything else.

The Walters

Makes: 2 kg

  • 8 large quinces
  • 2 1/2 kg sugar
  • 3 3/4 litres water

Preparation:30min  ›  Cook:4hours  ›  Ready in:4hours30min 

  1. Rub the fluff from the quinces, put into preserving pan. Add sugar and water. Boil together for 4 hours. After 4 hours jam should have lots of small bubbles (this indicates that it will set). Strain off into jars.


The fruit left over will is delicious with cream or custard. Should there be too much to use, it will make a good jam for tarts or puddings.
