This recipe is for the base of a Swiss roll. It is a very basic recipe but the classics are the always the best, right? Fill with your favourite jam or mock cream.

The Walters

Makes: 1 cake

  • 1 cup (130g) flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon bicarb soda
  • 2 eggs
  • 1 cup (220g) sugar
  • 1/2 cup (125ml) boiling milk
  • 2 tablespoons cocoa powder

Preparation:30min  ›  Cook:15min  ›  Extra time:5min resting  ›  Ready in:50min 

  1. Preheat oven to 180 degrees C.
  2. Sift flour and cream of tartar onto a plate, adding cocoa. Put on side of stove to keep warm. Beat eggs and sugar for 5 minutes. Mix in flour.
  3. Add bicarb soda to boiling milk and mix in with flour and eggs. Pour into a Swiss roll tin then bake in preheated oven for 15 minutes.
  4. Turn out onto a damp cloth and roll at once. Leave a few minutes then unroll. Spread with jam or lemon cheese and roll again.
