With a mixture of currants, dates, raisins or sultanas, this cake is loaded with fruit and also has a hint of coconut. Makes a great afternoon tea or after school snack.

The Walters

Makes: 1 cake

  • 1 cup currants or dates
  • 1 cup raisins or sultanas
  • 1 cup (110g) sugar
  • 1 cup (250ml) cold water
  • 1 tablespoon desiccated coconut
  • 130g butter
  • 1/2 teaspoon vanilla essence
  • 2 1/2 cups flour
  • 1 teaspoon bicarb soda

  1. Preheat oven to 180 degrees C. Grease a cake tin.
  2. Boil the fruit, sugar, water, coconut, butter and vanilla together for five minutes. When lukewarm, gradually sift in flour and bicarb soda. Put into a greased cake tin and bake in preheated oven until a knife inserted into the centre comes out clean.
