Roasted Cherry Tomato and Goats Cheese Salad

    This simple salad goes very well with roast beef and has a creamy flavour. It’s also a very pretty accompaniment to a Christmas meal that includes barbequed meats.

    Makes: 4 side servings

    • 2 punnets red and yellow cherry tomatoes
    • salt and pepper, to taste
    • 2 tablespoons olive oil
    • 1/2 red onion, thinly sliced
    • 200g crumbled goats cheese

    1. Preheat oven to 200 degrees C. Wash and dry cherry tomatoes.
    2. In a large bowl gently mix the tomatoes with olive oil, salt and pepper. Put on an ungreased baking tray then roast for 6-8 minutes until the skins start to split. Cool on tray.
    3. While the tomatoes are cooking use the large bowl coated with olive oil and separate onions rings in it. Add the tomatoes and just combine. Add the goats cheese and just combine.
