By using egg whites and less sugar than traditional apple kugel, you have a kugel that is much lighter. Spiced with cinnamon, this kugel is great all year round.


Serves: 6 

  • 1 cup hot water
  • 1 cup matzo farfel
  • 1/2 cup white sugar
  • 2 large apples, peeled, cored and grated
  • 2 teaspoons ground cinnamon
  • 3 egg whites, stiffly beaten

Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

  1. Preheat oven to 190 degrees C. Spray a square baking dish with non-stick cooking spray.
  2. In a large bowl, combine the water and farfel. Add the sugar, apple and cinnamon. Fold in the egg whites. Pour mixture into the prepared baking dish and dust the top with more cinnamon.
  3. Bake in preheated oven for 45 minutes.
