Rice Fritters

    Rice fritters seasoned with parsley and onion are fried until crisp and golden brown. These are a pleasant meat alternative and also a great use for leftovers.

    Serves: 2 

    • 1/4 cup oil, for frying
    • 2 cups cooked rice
    • 2 tablespoons flour
    • 1/2 cup milk
    • 2 eggs, beaten
    • salt, to taste
    • parsley and diced onion, to taste

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Heat oil in a large frying pan over medium high.
    2. Mix together all ingredients. Put tablespoonfuls in the frying pan then fry until golden brown on both sides.

    Wow what a great alternative to plain ol' rice! These little fritters were just delicious. If I change anything at all next time, it would only be to add a little more onion. We both really enjoyed these. Thanks for this one!!  -  01 Jun 2013
