Vegan Fried Rice

    Frying together rice, ginger, garlic, celery, carrots, peas and nutmeat you get a delicious and vegan dinner. Can also be made with just the vegetables.

    Serves: 6 

    • 2 tablespoons vegetable oil
    • 1 teaspoon garlic
    • 1 teaspoon crushed ginger
    • 1 cup diced celery
    • 1 cup diced carrots
    • 4 cups cooked rice
    • 1 cup cooked peas
    • 2 cups nutmeat, diced

    1. Melt 2 tablespoons vegetable oil, add garlic and ginger. When very hot add celery and carrots. After braising for a few minutes, add a little water, cover then steam for 5 minutes.
    2. In a large frying pan or wok heat the remaining oil. When very hot, add rice. Prevent from sticking by turning frequently. When rice has been heated though, add the other ingredients then serve hot.

    Cook's Note

    Great use for leftovers.
