Leftover Split Pea and Ham Soup

    One of my many favourites, this split pea and ham soup is made from scratch. Slow simmering the ham or bacon bone for hours with veggies to make a delicious base before adding the peas.

    Serves: 8 

    • 1 tablespoon oil
    • 2 sticks of celery, diced
    • 1 large carrot, diced
    • 2 onions, diced
    • 12 cups (3 litres) water
    • 1 (1-1 1/2kg) leftover ham bone or bacon bone
    • 2 bay leaves
    • white pepper, to taste
    • 500g split peas, rinsed

    1. In a large saucepan, heat oil. Add celery, carrot and onions. Stir until soft then add the water, ham bone, bay leaves and white pepper. Half cover and allow to simmer for 3 hours.
    2. Remove ham bone and chop off all of the meat into bite sized pieces and discard the bone. Return the meat to the saucepan then add the split peas.
    3. Allow to simmer half covered for 1- 1 1/2 hours, stirring occasionally, until soup is the desired consistency. Enjoy with crusty bread.

    Simple ingredients, easy to follow instructions. I made croutons by frying in olive oil 1x1 inch squares of sourdough and served with those as crusty but hot  -  03 Jan 2018
