Simply Delicious Gooseberry Jam

    This delicious gooseberry jam goes great on scones, biscuits, toast and anything you can imagine. Using only gooseberries, water and sugar, this jam is simple.

    Makes: 4 kg

    • 4 kg green gooseberries
    • 4 litres water
    • sugar (see below)

    Preparation:30min  ›  Cook:1hour  ›  Extra time:1hour cooling  ›  Ready in:2hours30min 

    1. Boil the gooseberries gently in the water until a slightly pink tint is visible.
    2. Measure the amount you have in a jug, then add an equal amount of sugar. Return to the saucepan and allow the sugar to dissolve. Return to a boil then cook rapidly until the mixture jellies.
    3. Allow to cool before bottling or freezing.
