These delicious pumpkin scones go down well with a bit of butter and a wee dob of whipped cream. What a lovely treat and a wonderful way to use any leftover pumpkin.

The Walters

Serves: 8 

  • 1 cup cooked pumpkin, mashed
  • 1 tablespoon butter,
  • 1/2 cup sugar
  • 1 egg, well beaten
  • 2 3/4 cups flour
  • 1 1/2 teaspoon bicarb soda
  • 3 teaspoons cream of tartar

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Mix all well together then add one tablespoon of cold water or enough to make a scone dough. Cut into squares and bake on a baking tray at 200 degrees C until done, about 20-30 minutes.
