    Tahini, tofu and tomato are grilled on pita bread for this delicious sandwich. Great when you're short on time but want a healthy treat!

    Serves: 2 

    • 2 pita bread rounds
    • 3 tablespoons mayonnaise
    • 3 tablespoons tahini
    • 1 tomato, sliced
    • 4 slices firm tofu
    • 1 dash soy sauce
    • 1 pinch salt

    1. Preheat grill.
    2. Split the pita breads in half so that you have 4 round pieces. Spread mayonnaise on one half of each one and tahini on the other half. Place tomato slices onto the mayonnaise halves and sprinkle with a pinch of salt. Place 2 slices of tofu onto the tahini halves and sprinkle with a few drops of soy sauce.
    3. Place the pita breads on a large baking sheet. Grill in the preheated oven until hot and bread is slightly toasted, about 4 minutes. Close the halves of each sandwich together and cut into wedges to serve.

    Used different ingredients. I made this sandwich last night for my sister. I'm vegan- and I also don't use or like mayo. I put a bit more soy sauce on the tofu. I put a tahini salad dressing on the mayo side and fresh spinach under the tomato slice. I did use mayo on my sister's sandwich & it came out all yummy & crispy. I think this is a nice light sandwich that is quite good & very easy to make! - 29 Sep 2008
