Mock Cream

    Mock cream, also known as buttercream, is a great icing for your cakes or filling for inside. You can use any flavouring you like, we chose to use vanilla.

    Makes: 1 cup

    • 1 cup milk
    • 1 tablespoon cornflour
    • 2 tablespoons cold water
    • 1 tablespoon butter
    • 2 tablespoons sugar
    • 1/2 teaspoon vanilla

    Preparation:15min  ›  Cook:5min  ›  Extra time:30min cooling  ›  Ready in:50min 

    1. Boil the milk. Blend the cornflour in with the water then pour into the boiling milk. Reduce heat to medium and simmer for one minute, stirring. Remove from heat and allow to cool until cold.
    2. Cream together sugar, butter and vanilla then add the cold milk and cornflour mixture one tablespoon at a time, beating into a thick icing.
