ANZAC Crispies

    This ANZAC biscuit recipe has been in our family since the war. Using flour, quick oats, sugar, butter and golden syrup, these have always been my favourite.

    Makes: 2 dozen

    • 1 cup (130g) flour
    • 2 cups (180g) quick oats
    • 1/2 cup (110g) sugar
    • 130g butter, melted
    • 1 tablespoon golden syrup
    • pinch salt
    • 1 teaspoon bicarb soda
    • 2 tablespoons boiling water

    1. Preheat oven to 180 degrees C.
    2. Sift flour into a bowl. Add quick oats, sugar and butter, golden syrup and salt then mix well. Dissolve soda in boiling water then stir in with the rest of the ingredients.
    3. Drop onto a baking tray in spoonfuls. Bake in preheated oven until cooked and golden, about 15 minutes. Allow to cool on tray for 10 minutes before transferring to a wire rack.
