Delicious cherry cupcakes filled with glace cherries and topped with a soft lemon icing are a great treat for any party or gathering or just afternoon tea.

The Walters

Makes: 12 cupcakes

  • Cupcakes
  • 90g butter
  • 90g sugar
  • 2 eggs
  • 60ml milk
  • 190g plain flour
  • pinch salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla essence
  • 60g glace cherries
  • Soft Icing
  • 130g icing sugar
  • 1 tablespoon lemon juice

  1. Preheat oven 180 degrees C. Grease muffin tins or line with paper liners.
  2. Cream together butter and sugar, add egg and milk gradually. In a separate bowl sift together flour, salt and baking powder. Add this to the wet mixture. Add vanilla essence and cherries.
  3. Pour in the prepared muffin tins and bake in preheated oven until a knife inserted into the centre comes out clean, about 15 minutes.
  4. Soft Icing

  5. Combine icing sugar and lemon juice. Pour over the cherry cupcakes to serve.
