If anyone knows how to run a wicked Paleo backyard BBQ, it's me! Sorry to brag, but I have very few bragging rights and so I must give myself credit where credit is due. Over the next week I am going to share with you a few easy, delicious recipes that will make your BBQ into a taste sensation.
Steam the sliced sweet potato in a steamer for 10 - 15 mins.
Fry the mushrooms, burger paddies and red capsicum slices on the BBQ grill until cooked. The mushrooms will go all juicy and soft when they are ready.
Skewer the sweet potato slices to see if they are soft all the way through, then add them to the BBQ for a minute on each side.
Serve the sliced avocado, spinach, tomato, sweet potato, mushrooms, capsicum, pesto and burger paddies in separate plates on the table and let people build their own burgers!
I make my burger by stacking everything up into a leaning tower of burger. Layer 1: Mushroom
Layer 2: Spinach
Layer 3: Avocado & tomato
Layer 4: Capsicum
Layer 5: Sweet potato
Layer 6: Burger paddy with pesto sauce
Layer 7: Mushroom
