This rice pudding with raisins seasoned with nutmeg then simmered until soft. It is baked in the oven until set. This delicious pudding is great all year round.

Serves: 4 

  • 1/2 cup raisins
  • 1/3 cup rice
  • 3 cups milk
  • 2 eggs, well beaten
  • 1/2 cup sugar
  • nutmeg, to taste

Preparation:15min  ›  Cook:50min  ›  Ready in:1hour5min 

  1. Wash rice and put in a double saucepan with 1 cup of water. Cook rice until water is absorbed, about 30 minutes then add 2 cups of milk.
  2. Cook until tender then add sugar, the remaining cup of milk, nutmeg and well beaten egg. Mix with raisins. Pour into a pie dish then sent in a pan of hot water. Bake until set.
