This is a very simple recipe for making tuna and vegie balls that are baked in the oven. I triple the recipe and freeze three uncooked portions in a glass dish starting with a bottom layer, then a piece of baking paper, then a second layer, another piece of baking paper and then a third layer and foil over the top. They freeze well for about a month.

Makes: 10 fish balls

  • 3 cups of steamed vegetables (I use carrots, broccoli, potato), mashed
  • 1 tin of tuna, drained
  • 3 eggs, beaten
  • 1 cup fine breadcrumbs

Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

  1. Mix together the vegies and tuna.
  2. Roll tablespoonfuls into balls.
  3. Coat each ball with egg and then roll in breadcrumbs.
  4. Bake in a moderate oven 180 degrees C for 30-40 minutes until golden brown. Serve with tomato sauce or mayonnaise.
