A versatile marinade with orange and pineapple juice, garlic, chilli flakes, balsamic vinegar and olive oil. Makes a great marinade for fish or any meat.
130ml balsamic vinegar
250ml orange juice
250ml pineapple juice
4 tablespoons olive oil
2 teaspoons freshly ground black pepper
1 clove garlic, minced
3 spring onions, finely diced
chilli flakes or Tabasco(TM) sauce, to taste

In a medium bowl, blend the vinegar, orange juice, pineapple juice, olive oil, pepper, garlic, spring onion and chillies.
Place meat or fish in a shallow glass dish or bowl, pierce with a fork a few times then pour 1/2 of the marinade over it. Turn over and repeat. Marinate for at least 1 hour, up to 24 hours for best flavour.
This did nothing for me. The marinade smelled great, but I did not think it did much for the chicken. My husband liked it, but I will not make this again. It was too mild and bland for me. - 29 Sep 2008
