    A versatile marinade with orange and pineapple juice, garlic, chilli flakes, balsamic vinegar and olive oil. Makes a great marinade for fish or any meat.

    Serves: 8 

    • 130ml balsamic vinegar
    • 250ml orange juice
    • 250ml pineapple juice
    • 4 tablespoons olive oil
    • 2 teaspoons freshly ground black pepper
    • 1 clove garlic, minced
    • 3 spring onions, finely diced
    • chilli flakes or Tabasco(TM) sauce, to taste

    1. In a medium bowl, blend the vinegar, orange juice, pineapple juice, olive oil, pepper, garlic, spring onion and chillies.
    2. Place meat or fish in a shallow glass dish or bowl, pierce with a fork a few times then pour 1/2 of the marinade over it. Turn over and repeat. Marinate for at least 1 hour, up to 24 hours for best flavour.

    This did nothing for me. The marinade smelled great, but I did not think it did much for the chicken. My husband liked it, but I will not make this again. It was too mild and bland for me. - 29 Sep 2008

    I used this marinade with fish. My husband thought it was really good. I didn't like it as well, but I am not feeling very good, so that might be the reason. - 29 Sep 2008
