Homemade lemon pudding from scratch using only milk, sugar, zest of a lemon, cornflour and the whites of two eggs. Boil then then chill in the fridge. Enjoy cold.

Serves: 4 

  • 1 lemon, zested
  • 470ml milk
  • 1 1/2 tablespoons cornflour
  • 1/4 cup sugar, to taste
  • 2 egg whites, beaten with a fork

Preparation:10min  ›  Cook:20min  ›  Extra time:1hour chilling  ›  Ready in:1hour30min 

  1. Boil milk and lemon rind in a saucepan for about 15 minutes. Thicken with cornflour. Add sugar (adjust to your own taste). Add egg whites. Allow to cool then chill for about an hour in the fridge.
