This delicious salad has quinoa tossed with smoked salmon, sliced cucumber, red onion, grated carrot, parsley and fresh mint then is drizzled with lemon juice and oil.


Serves: 4 

  • 140g quinoa
  • 1 tablespoon olive oil
  • 3 tablespoons lemon juice
  • 400g smoked salmon, flaked
  • 2 cucumbers, halved lengthwise then sliced thin
  • 1/4 red onion, sliced thin
  • 1 carrot, grated
  • 1/3 cup parsley, chopped
  • 1/4 cup mint leaves

  1. Cook quinoa according to packet directions, then allow to cool.
  2. Whisk together the oil and lemon juice.
  3. In a bowl, combine quinoa with remaining ingredients then stir in the lemon oil mixture to serve.
