Scalloped Potatoes with Goat Cheese

Thinly sliced potaotes fried in olive oil then topped with red oinion, garlic, thyme and a tiny drizzle of balsamic vinegar. Baked with rocket and goat cheese.


Serves: 2 

  • 2 tablespoons olive oil
  • 450g potatoes, peeled and sliced thin
  • salt and black pepper, to taste
  • 1 red onion, sliced
  • 2 cloves garlic, finely diced
  • 1/2 tablespoon fresh thyme
  • 1 tablespoon balsamic vinegar
  • 1/2 cup rocket
  • 2 slices goat cheese

  1. Preheat oven to 200 degrees C.
  2. Heat half the oil in an oven safe frying pan. Place potatoes in, sprinkle with salt and pepper then cook until brown and crisp, about 5 minutes.
  3. In another frying pan, heat remaining oil then stir in onions. Cook until soft. Stir in garlic, thyme and vinegar then lower heat and cook for 5 minutes.
  4. Stir rocket into onion mixture then pour over the potatoes. Cover with sliced goat cheese then bake in preheated oven until bubbly and brown, about 15 minutes.
