    Tortillas baked until crisp, topped with cheese, avocado and bean spread then sprinkled with capsicum, spring onions and chives. Serve with salsa on the side.

    Serves: 4 

    • 10 mini tortillas
    • 1 1/2 cups tasty cheese
    • 1/2 teaspoon oregano
    • 400g cannellini beans, rinsed
    • 1 large avocado
    • 2 1/2 tablespoons lime juice
    • 1 long red chilli, seeded and diced
    • 1 clove garlic, crushed
    • 1 red capsicum, diced
    • 4 spring onions, diced
    • 2 large chives, chopped
    • 1/2 cup tomato salsa

    1. Preheat oven to 200 degrees C. Line baking tray with baking paper. Lay tortillas on tray then sprinkle on cheese. Bake in preheated oven for 5 minutes until crisp. Sprinkle with oregano then cut tortillas into wedges. (You may have to do this in batches).
    2. In a bowl add avocado, lime juice, chilli and garlic then mash together with a fork. Spread over the tortillas then sprinkle on the capsicum, spring onion and chives. Serve with salsa for dipping.
