In a bowl, add the salt (if using) to the yoghurt. Mix thoroughly.
Place a colander over a bowl and line it with muslin. Spoon the yoghurt into the muslin, fold the muslin over the top, twist up the ends and let the yoghurt drain for 12 to 24 hours at room temperature.
Serve with honey and walnuts or use on fruit bruschetta.
