Easy Yoghurt Cheese

    Use this delicious homemade yoghurt cheese as a spread on crusty bread - top with sliced fruit or walnuts and a drizzle of honey.

    Makes: 1 cheese ball

    • 1 kg natural yoghurt
    • 1 teaspoon salt (optional)
    • muslin or cheesecloth

    1. In a bowl, add the salt (if using) to the yoghurt. Mix thoroughly.
    2. Place a colander over a bowl and line it with muslin. Spoon the yoghurt into the muslin, fold the muslin over the top, twist up the ends and let the yoghurt drain for 12 to 24 hours at room temperature.
    3. Serve with honey and walnuts or use on fruit bruschetta.
