Roast quail served with a beef and mushroom gravy and sprinkled with crispy bacon. This tasty dish is great for a special dinner or just an everyday meal.


Serves: 4 

  • 4 quails
  • 2 tablespoons olive oil
  • 4 rashers bacon, diced
  • 130g butter
  • 1 tablespoon plain flour
  • 2 small brown onions, diced
  • 2 cloves garlic, diced
  • 1/2 cup beef stock
  • 8 small mushrooms, quartered
  • 4 spring onions, sliced
  • 1 sprig parsley

  1. Preheat oven to 200 degrees C. Brush quail with olive oil then roast in preheated oven for 25 minutes, then turn the oven off but leave the quail in for another 25 minutes.
  2. In a frying pan cook the bacon. Set aside. Melt butter in a saucepan and saute in the onions and garlic. After a couple of minutes, whisk in the flour until smooth.
  3. Slowly whisk half of the stock then sir in the mushrooms, spring onions and parsley. Simmer while stirring, adding more stock when need.
  4. Serve cooked quail with the vegetable sauce and sprinkle with bacon.
