Green Tomato Gnocchi

    Nothing beats cooked gnocchi smothered in a chunky homemade sauce of stewed green tomatoes, fresh basil, pesto and garlic then it's topped with Romano cheese.

    Serves: 4 

    • 500g gnocchi
    • 1/4 cup olive oil
    • 2 tablespoons butter
    • 2 cloves garlic, diced
    • 2 medium green tomatoes, diced
    • 4 fresh basil leaves, diced
    • 1 tablespoon basil pesto
    • salt and pepper, to taste
    • 1 cup Romano cheese, grated

    1. Cook gnocchi according to the packet directions.
    2. In a large frying pan saute the oil, butter and garlic, until garlic is warmed but not brown. Stir in the green tomatoes, basil and pesto then stew for about 5 minutes.
    3. Pour over the gnocchi then sprinkle with salt, pepper and cheese to serve.
