This frittata is quick and easy to whip up for breakfast or brunch. It has oysters, spring onions and tasty cheese baked right in. Serve with toast.


Serves: 2 

  • 4 eggs
  • 1 tablespoon milk
  • 1/4 cup tasty cheese, grated
  • 2 tablespoons butter
  • 5 oysters, shucked and diced
  • 1 spring onion, diced
  • salt and pepper, to taste
  • parsley, to serve

  1. Preheat oven to 200 degrees C. Beat eggs and milk in a bowl. Stir in the cheese.
  2. Heat butter in frying pan then pour in beaten eggs. Sprinkle on the osyter and spring onion then cook for 30 seconds.
  3. Place frying pan in oven and bake until set, about 4 minutes. Sprinkle with salt, pepper and parsley to serve.
