    This chocolate mousse has melted peppermint dark chocolate beaten with butter and eggs. Pour into individual cups then refrigerate to set before serving.

    Ingredients
    Serves: 6 

    • 200g peppermint dark chocolate
    • 90g butter, diced
    • 6 eggs, seperated

    1. Break up chocolate and put it in a heatproof bowl then place on top of a saucepan of simmering water. Stir until chocolate is melted. Stir in butter and continue to stir until smooth.
    2. Remove from heat and stir in egg yolks. In a separate bowl, beat together egg whites until stiff peaks begin to form.
    3. Fold egg white mixture into chocolate mixture. Pour into 6 serving cups then refrigerate until set.
