Wholemeal Savoury Bacon Cheese and Chive Beer Bread

    A very easy and yummy twist on plain ol' beer bread.

    Makes: 1 loaf

    • 1 cup grated Tasty cheese
    • 1/4 cup finely grated Parmesan cheese
    • 2 large bacon rashers, rind removed & diced
    • 2 spring onions finely sliced
    • 4 whole anchovy fillets finely sliced
    • 2 heaped teaspoons garlic
    • 1/4 cup chopped chives
    • 1 cold bottle of beer (of choice)
    • 3 cups self raising wholemeal flour

    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Prepare first 7 ingredients as described.
    2. Combine all thoroughly but gently.
    3. Add flour one cup at a time, incorporate well before adding the next cup.
    4. Pour beer slowly into the mixture until well combined.
    5. Once mixture resembles a damper mix pour into a greased loaf tin.
    6. Gently push out dough to fill tin.
    7. Sprinkle with herb flavouring of choice or sprinkle with extra parmesan cheese.
    8. Lightly spray with olive oil.
    9. Back in 190 C oven for 45 mins.
    10. Turn oven up to 220 C and back for a further 10 mins to brown top of loaf.
    11. Leave in pan for 5 mins before turning out onto a cooling rack.


    You can add any ingredients you like i.e sliced olives, sesame seeds, mixed herbs etc.
