Typical dish from Puglia in South Italy. You can make it just with your hands or a knife. This recipe can be used for all the pasta shapes. All that is needed is a food processor with a special tool with pasta shapes or a southern Italian grandma that shared with you her ability to shape the dough with her hands or simple kitchen tools.

Serves: 6 

  • 500g semolina flour
  • 10g salt
  • 15ml olive oil
  • 250ml warm water

Preparation:20min  ›  Ready in:20min 

  1. Mix together the ingredients and leave the dough rest for 15 minutes.
  2. Then you roll a little bit of dough to make a string and cut little pieces 1cm long. At the end with your thumb or a knife you press in the middle to obtain the right shape. (see picture)
  3. Boil in salted water for 7-8 minutes.
