This vegetable minestrone has vegetable stock, tomatoes, celery, carrot, potato, cabbage, green beans, borlotti beans, zucchini and basil, all simmered together.
3 litres vegetable stock
250g tomatoes, peeled, seeded and pureed
1 celery stick, diced
200g carrot, diced
1 onion, diced
1 potato, peeled and diced
200g cabbage, cut into strips
200g green beans, cut into bits
440g tin of borlotti beans, drained
200g zucchini, thinly sliced
200g cherry tomatoes
1 tablespoon flat leaf parsley, chopped
salt, to taste
fresh basil, chopped, to serve
- In a large saucepan combine vegetable stock, pureed tomato, celery, carrot, onion and potato. Bring to a boil then simmer for 15 minutes.
- Stir in the cabbage, green beans, borlotti beans, zucchini and cherry tomatoes. Simmer for 5 minutes more then remove from heat.
- Serve with topped with parsley, salt and basil.
