    The churro is the Mexican version of a donut. Water, butter, flour and eggs are mixed to form a dough, rolled into tubes, fried in oil then coated in sugar and cinnamon.

    Ingredients
    Makes: 6 churros

    • 500ml olive oil
    • 1 cup (250ml) water
    • 125g butter
    • 1 cup (125g) flour
    • 3 eggs
    • 1/2 cup (110g) sugar
    • 1 teaspoon cinnamon

    Directions
    Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Pour olive oil into a hot saucepan. Heat water and butter in another saucepan then mix in the flour. Stir on low heat until it begins to thicken. Remove from heat then mix in the eggs.
    2. Roll the dough into tube shapes. Fry each tube in olive oil until golden brown and crispy.
    3. In a bowl mix together the sugar and cinnamon. Roll the cooked churro in the sugar mixture.
