Spaghetti with Anchovies and Olives

    This homemade spaghetti sauce is made from tomatoes, garlic, onion, celery, basil, anchovies, capsicum, chives and olives then served over spaghetti.

    Serves: 6 

    • 500g spaghetti
    • 1 tablespoon olive oil
    • 5 cloves garlic, sliced
    • 1 onion, diced
    • 2 stick celery, sliced
    • 1/4 cup fresh basil, chopped
    • 2 anchovies
    • 1 capsicum, diced
    • 2 tablespoons chives, chopped
    • 800g tomatoes, diced
    • 200g black olives, sliced
    • salt and pepper, to taste

    1. Cook spaghetti according to packet directions then drain.
    2. In a large saucepan cook garlic, onion, celery and capsicum in olive oil until soft. Stir in basil, anchovies, capsicum, chives, tomatoes and olives. Reduce heat then simmer until warm through and flavourful, about an hour. Season with salt and pepper to taste.
