    This is a favourite family recipe, that all the family love and it's very easy to make. Also you can vary ingredient amounts depending on what you have available.

    Serves: 4 

    • 500g pork pieces
    • 2-3 cooking apples (I use any kind)
    • 2-3 large kumara
    • 1 teaspoon salt
    • 1/2 teaspoon fresh ground nutmeg or from a packet
    • 1/2 cup orange juice (fresh or from a bottle)

    1. Brown pork pieces in a hot fry pan, then place browned pork pieces bottom of a casserole dish.
    2. Peel apples and slice, then place on top of pork. Pour over orange juice. Peel and slice kumara into 1cm slices, then arrange on top of apple. Sprinkle kumara with nutmeg and salt.
    3. Cover casserole and bake at 180 degrees C for about an hour or until kumara are tender. Serves 4 to 6 depending on what you serve with it.
