Ingredients
Makes: 12 muffins
- 2 1/2 cups (310g) self raising flour
- 1 teaspoon baking powder
- 1 cup ( 220g) castor sugar
- 1/2 cup (130ml) milk
- 2 teaspoons vanilla essence
- 1 large egg
- 1/2 cup (130ml) vegetable oil
- 150g fresh raspberries
- 150g white chocolate bits

- Preheat oven to 180 degrees C. Grease or line 12 muffin cups.
- In a bowl, mix together baking powder, sugar and flour. In separate bowl, mix the oil, egg, milk and vanilla. Slowly mix the flour mixture into the egg mixture, mixing well.
- Mix in the raspberries and the chocolate, mixing well. Bake in preheated oven for 30 minutes or until a toothpick inserted in the centre comes out clean.

These were terrific. The only problem that I has was that the batter was very thick. That made it hard to fold in the raspberries without crushing them. Still a very yummy muffin. Thanks for sharing! - 20 Jun 2013

My family loved these! I made 10 generous sized muffins and used a third less oil but added around 40g melted butter to the wet ingredients. Also used frozen raspberries which was still delicious. I've been asked to pass on your recipe. Thanks! - 25 Aug 2015
