This easy and light zucchini pasta has zucchini, garlic, onion, sundried tomatoes, lemon zest, pinenuts and basil all simmered to perfection then mixed with pasta.
2 tablespoons olive oil
4 zucchini, grated or slice thinly
2 cloves garlic, crushed
1 onion, diced
3 tablespoons sundried tomatoes, chopped
1 lemon, zested
2 tablespoons pinenuts
fresh basil, to taste, chopped
- Cook pasta according to packet directions. Drain and set aside.
- Lightly toast the pinenuts in a frying pan until lightly brown, set aside. Fry the onions and garlic in the olive oil until soft. Add zucchini then cook until lightly brown and soft. Season.
- Add sundried tomatoes, lemon zest and pinenuts. Add cooked pasta. Add basil then drizzle over a little olive oil to serve.
