Zucchini Pasta

    This easy and light zucchini pasta has zucchini, garlic, onion, sundried tomatoes, lemon zest, pinenuts and basil all simmered to perfection then mixed with pasta.

    Serves: 4 

    • 2 tablespoons olive oil
    • 4 zucchini, grated or slice thinly
    • 2 cloves garlic, crushed
    • 1 onion, diced
    • 3 tablespoons sundried tomatoes, chopped
    • 1 lemon, zested
    • 2 tablespoons pinenuts
    • fresh basil, to taste, chopped
    • 250g pasta

    1. Cook pasta according to packet directions. Drain and set aside.
    2. Lightly toast the pinenuts in a frying pan until lightly brown, set aside. Fry the onions and garlic in the olive oil until soft. Add zucchini then cook until lightly brown and soft. Season.
    3. Add sundried tomatoes, lemon zest and pinenuts. Add cooked pasta. Add basil then drizzle over a little olive oil to serve.
