Peking Duck Wraps

    These peking duck wraps are a great way to use your leftover duck. Chinese duck is wrapped up in a tortilla with cucumber, spring onions and hoisin sauce.

    Ingredients
    Makes: 6 wraps

    • 1/2 Chinese duck, bones removed
    • 6 burrito tortillas
    • 1 Lebanese cucumber, sliced lengthwise
    • 2 spring onions, sliced lengthwise
    • 1/2 cup hoisin sauce

    Directions
    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Heat oven to 180 degrees C. Wrap duck in foil and put in the oven. Wrap tortillas in foil and place in the oven. When both are hot, remove.
    2. Spread each tortilla with 1 tablespoon of hoisin sauce. Add peking duck, 2 cucumber slices and 2 slices of spring onions to each tortilla.
    3. Roll up like a burrito then serve.
