Quick Tomato Relish

    Good tomato relish often takes a long time to make. This recipe is a quick version that is still very delicious and full of flavour. It is sweet, spicy and fruity.

    Serves: 30 

    • 5 medium tomatoes, diced
    • 2 large onions, diced
    • 2 apricots, diced
    • 2 fresh dates, chopped finely
    • 4 tablespoons sultanas
    • 2 cups (500ml) apple cider vinegar
    • 1/4 teaspoon salt
    • 3 teaspoons curry powder
    • 1/4 teaspoon allspice
    • 1/2 teaspoon ghost chilli (or very hot chilli powder)
    • 1 cup brown sugar

    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Place all ingredients in a large pot.
    2. Bring to the boil and boil for 15 minutes. Reduce the heat to medium-high and cook for about 45 minutes or until thickened.
    3. Allow to cool.

    This recipe can be made as mild or spicy as you like. I like to make it very spicy. It is really nice with sharp cheddar on a sandwich.  -  24 Jun 2012
