Banana Nut and Pineapple Bread

    The tropics can be found in this bread with bananas, coconut, pineapples and cherries! This is a simple but delicious banana bread which is ideal for lunches or snacks.

    Serves: 30 

    • 3 cups (375g) of Gluten free plain flour
    • 1 cup (125g) white sugar
    • 1 teaspoon ground cinnamon
    • 3/4 teaspoon salt
    • 1 teaspoon baking powder
    • 1 cup (125g) chopped walnuts
    • 1 cup diced maraschino cherries
    • 250g drained crushed pineapple
    • 1 cup desiccated coconut
    • 2 cups mashed very ripe banana
    • 3 eggs, whisked
    • 2 teaspoons vanilla essence
    • 1 cup (250ml) vegetable oil

    1. Preheat oven to 180 degrees C and grease two 22x13cm loaf tins.
    2. Combine the flour, sugar, cinnamon, salt and baking powder in a large mixing bowl then add the walnuts, cherries, pineapple, coconut, banana, eggs, vanilla and oil.
    3. Stir until just until blended. Pour batter evenly into the prepared tins.
    4. Bake in preheated oven for 60 minutes or until a tooth pick inserted into the centre of a loaf comes out clean.
    5. Cool in the tin for 10 minutes then remove to a wire rack to cool completely.
