Kumara and Capsicum Soup

    This home made soup has kumara, carrots, red capsicum, garlic, mixed herbs, chilli powder, garam masala, butter, cream and vegetable stock, simmered then pureed.

    Serves: 6 

    • 4 kumara, peeled and diced
    • 4 carrots, peeled and diced
    • 1/2 red capsicum, diced
    • 1/2 teaspoon garlic
    • 1 1/2 teaspoon mixed herbs
    • 2 teaspoons chilli powder (optional)
    • 2 teaspoons garam masala (optional)
    • 1 vegetable stock cube
    • 2 cups (500ml) boiling water
    • 30g butter
    • 25ml cream (optional)

    1. Melt butter in a large saucepan. Add kumara, carrots and capsicum then sauté over medium heat for 5 minutes. Add the garlic, herbs, salt and black pepper.
    2. Mix vegetable stock with the boiling water then add to the saucepan. Simmer for about 20 minutes or until carrots are soft then add the chilli and garam masala.
    3. Once the vegetables are soft, puree soup with a stick blender. Add the cream then serve.


    I prefer to use thickened cream (this is why I use such a small quantity) but you can use the type you are most keen on.

    I didnt have a carrot so used more home grown small red capsicum . I used fat reduced condensed milk , half a cup , instead of cream . A satisfying light supper with some crusty bread .  -  12 Jan 2016


    Really easy to make. Delicious with or without the cream, the cream changes the taste completely. I would tend to make it on the spicy side, but the cream will make it palatable for people who prefer a milder taste.  -  17 Dec 2013  (Review from Allrecipes UK & Ireland)
