Spicy Mango Rice

    Serves: 2 

    • 4 tablespoons cooking oil
    • 1 teaspoon mustard seeds
    • pinch asefotida
    • 1 sprig curry leaves
    • 1 tablespoon yellow split peas
    • 1 tablespoon peanuts, chopped
    • 5 green chillies, sliced finely
    • 1 teaspoon turmeric powder
    • 1 small unripe mango, grated
    • 1/2 cup grated coconut
    • 1 cup rice, cooked and cooled
    • salt to taste
    • 2 tablespoons corriander leaves, finely chopped

    1. Heat the cooking oil in a deep frypan. Add mustard seeds and fry until they start to splutter. Add asefotida, curry leaves, split peas, peanuts, green chillies and turmeric then fry for 1 minute.
    2. Add the grated mango and fry for three minutes. Add the grated coconut and fry one more minute. Take the pan off the heat. Add the rice and salt and mix well. Garnish with coriander.
