Nigerian Coconut Sweets

    This sweet is called 'shuku shuku' in Nigeria. It's very simple and easy to make and a favourite of children of all ages.

    Serves: 14 

    • 90g desiccated coconut
    • 60g caster sugar
    • 3 egg yolks
    • 60g self-raising flour

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat the oven to 180 degrees C.
    2. Mix together the coconut, sugar and egg yolks to form a stiff dough-like consistency. Take a little of the mixture and squeeze into balls about 2.5cm in diameter, coat with the flour and arrange on a baking tray.
    3. Place on the middle shelf of preheated oven and bake until golden, usually about 20 minutes.

    But they were overcooked on outside soon after 10 minutes in my fan forced oven, even when turned down 10'. Still yummy, but no good for fete. should be fine next time!  -  28 Mar 2011

    Something else. Reduce cooking time by half in fan forced oven.  -  28 Mar 2011
