Quick and Easy Butter Biscuits

    Butter biscuits are very easy to make and fun for kids to decorate. They are rich and crumbly and ready in just minutes. Add more sugar if you like them very sweet.

    Makes: 36 biscuits

    • 225g unsalted butter, room temperature
    • 1/2 cup sugar
    • 1 egg yolk
    • 1 teaspoon vanilla essence
    • 2 1/4 cups flour
    • pinch salt
    • 3/4 cup sugar, optional, for rolling

    1. Cream the butter and sugar. Add yolk and beat thoroughly with an electric mixer. Stir in vanilla essence, then add flour and beat well. The batter should be even and crumbly.
    2. Preheat oven to 200 degrees C. Make golf ball sized biscuits from the batter and place on baking trays.
    3. Bake for 10 minutes. Do not let them get brown. Take out and roll in 3/4 cup sugar. Let cool and serve at room temperature.
