Indian Rice with Potatoes and Peas

    This is a quick and delicious Indian vegetarian dish which is made with leftover rice. The flavours are very bright.

    Serves: 3 

    • 1 onion, sliced lengthwise
    • 1 potato (boiled and chopped)
    • 1/3 cup peas (boiled)
    • 1/2 teaspoon cumin seeds
    • 1/2 teaspoon mustard seeds
    • 1 green chilli
    • 2 - 3 curry leaves
    • 2 teaspoons vegetable oil
    • 1/4 teaspoon turmeric powder
    • 2 cups leftover cooked rice
    • 2 teaspoons lemon juice

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Saute the onions till light brown, add the rest of the ingredients above except for rice and lemon juice. Heat through until fragrant.
    2. Add rice and mix well. Add lemon juice and serve with plain yoghurt.

    I had leftover rice from Asian takeaway last night. This recipe is perfect for using it up. It's simple to make. I substituted Rogan Josh spice mix instead of that in the recipe. It still worked well and please three out of four diners at home. The fourth is horribly picky.  -  01 Feb 2013
