Lime Chilli Chicken

    Chicken is marinated in lime, garlic and chilli and then cooked until crispy brown on the barbecue or under the grill.

    Serves: 6 

    • 100ml vegetable oil
    • 2 tablespoons lime juice, about two limes
    • 1/2 teaspoon grated lime rind
    • 2 cloves crushed garlic
    • 1 1/2 teaspoons fresh oregano
    • 1/4 teaspoon dried red chilli flakes
    • 1 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 6 skinless, boneless chicken breast halves - about 150-200g each

    1. In a shallow glass dish, mix the oil, lime juice, lime rind, garlic, oregano, red chilli flakes, salt and black pepper. Add chicken, and turn to coat. Cover, and marinate in the refrigerator for 1 hour, turning occasionally.
    2. Preheat barbecue for medium-high heat.
    3. Lightly oil the barbecue hotplate. Drain the breasts and discard marinade. Cook chicken for 6 to 8 minutes on each side, or until juices run clear.

    Something else. Used fresh chilli and didnt cook on the bbq-cooked in hot frypan inside  -  19 Nov 2008


    Left the chicken to marinate overnight and it was absolutely awesome. Tender on the inside, crispy on the outside.  -  25 Oct 2009


    Made this last night-its great as long as you like lime (which I do!) garlic and chilli (ditto!). I used fresh chilli and didn't cook on the barbecue but in a hot, cast iron frypan inside.  -  19 Nov 2008
