An easy and tasty dessert! This is a great option when entertaining as it can be used as an accompaniment or as the main dessert dish. Serve with ice cream, custard or cake!

Serves: 6 

  • 2 tins (400ml each) coconut milk
  • 1/4 cup quick cook tapioca
  • 1 tablespoon sugar
  • 1/2 cup chocolate chips

Preparation:5min  ›  Cook:15min  ›  Extra time:20min cooling  ›  Ready in:40min 

  1. Add coconut milk and tapioca to a saucepan and simmer for 15 minutes, stirring constantly, until tapioca is transparent.
  2. Remove from heat and gently stir in sugar and chocolate chips until well blended. Pour into serving dish, allow to cool to room temperature. Serve alone or with dairy-free ice cream.
