An easy and tasty dessert! This is a great option when entertaining as it can be used as an accompaniment or as the main dessert dish. Serve with ice cream, custard or cake!
2 tins (400ml each) coconut milk
1/4 cup quick cook tapioca
1 tablespoon sugar
1/2 cup chocolate chips

- Add coconut milk and tapioca to a saucepan and simmer for 15 minutes, stirring constantly, until tapioca is transparent.
- Remove from heat and gently stir in sugar and chocolate chips until well blended. Pour into serving dish, allow to cool to room temperature. Serve alone or with dairy-free ice cream.
