Prawn Sausages with Prawn Consomme

    This is a great dish. It looks complicated but it's really easy. I added some fried sea perch to the version in the photo which was a great addition to the sweetness this recipe provides.

    Serves: 4 

    • 15 prawn meats - peeled and minced finely
    • 15 prawn shells (Use shells from peeled prawns)
    • 4 prawn heads
    • 1 leek - chop white part of leek finely and set aside - chop green part of leek roughly and set aside
    • 1 cup white wine
    • 1/2 cup sherry
    • 4 cups water
    • 3 sprigs of thyme
    • 5 sprigs parsley (ends)
    • 3 bay leaves
    • 2 tomatoes, peeled and chopped with seeds removed
    • 1 small garlic clove finely chopped
    • 2 tbs parsley, chopped finely
    • 2 tbs chives, chopped finely
    • 1 tbs flour

    1. Fry prawn shells and heads with leek in a saucepan until leek is translucent but not brown.
    2. Add wine and sherry to leek and prawn shells and cook for a few minutes.
    3. Add water, thyme, parsley sprigs, bay leaves and tomatoes. Simmer the mixture on a low heat for 30 - 45 minutes. Taste the mixture to determine when it is ready.
    4. Fry the finely chopped white leek in a separate pan until translucent. Set aside.
    5. Fry the chopped garlic until translucent. Set aside.
    6. Mix chopped prawn meat, leek, garlic, parsley, chives and flour together.
    7. Place the prawn mixture in some clingwrap and roll into a sausage shape. Remove cling wrap.
    8. Gently fry the sausage mixture in a fry pan, turning once each side has browned.
    9. Pour consumme into a bowl and arrange sausages as appropriate.
