Pork and Lotus Root Soup

You can find dried squid and lotus root at Chinese markets and then you can make this delicious soup with tender pork.

- 2 threads dried squid
- 100g raw peanuts
- 1 small lotus root
- 500g pork spare ribs, cut into pieces
- 15 Chinese red dates
- salt to taste
- soy sauce
- white pepper

- Soak the dried squid and peanuts separately in bowls of water for about 1 hour.
- Peel the lotus root and slice to medium thickness.
- Drain the soaked ingredients and put all ingredients except seasonings into a soup pot. Cover with water and cook on medium heat for 2 1/2 hours.
- Add salt at the end of cooking time. Serve soup in bowl and have soy sauce and white pepper as additional condiments on the side.
