This dish has simple flavours and lots of them, perfect for the whole family. If you can find them, use lo shi fun noodles, which are also called teardrop noodles. They are thick and stubby.
Blanch the noodles in hot water until soft, drain and set aside.
Heat 1 tablespoon oil in a wok, saute minced garlic and pork together. Add the oyster sauce, soy sauce, cooking wine and stir-fry. Add the Chinese cabbage and stir-fry for about 2 minutes then add the noodles.
Pour the beaten eggs in and stir-fry all the ingredients together until egg is cooked. Season with salt and pepper. Serve and garnish with fried shallots.
